Tonight for supper we are having BBQ Burgers, so I thought that I would add a little sweetness to the blog today.. Cookies!! I was looking for a recipe that was fairly healthy and these ones seem not to bad.. They have little sugar( with the adjustments that I make) and applesauce to boot.. So here it is, I hope you will enjoy 🙂
1 3/4c quick cooking oats
1 1/2c flour
1tsp baking soda
1tsp baking powder
1c brown sugar
1/2c white sugar
3/4c applesauce ( I used unsweetened and it tasted great)
1c chocolate chips
1c walnuts, chopped
~ Preheat your oven to 375.. Line you cookie sheets with parchment or grease them.. In a large bowl mix together all the dry ingredients.
~ In a large bowl cream your margarine and sugars( I used only 3/4c of brown sugar and omitted the white sugar all together) until smooth.. Add the egg and applesauce and mix until combined.. Stir in the dry ingredients and mix well.. Fold in the chocolate chips, raisins and nuts.. Drop with a teaspoon on cookie sheets.
~ Bake for 8-10 min, allow to cool for 5min before placing them on a cooling rack..
These cookies are good with just chocolate chips, just raisins or together.. This is the second time making them and I have never added the nuts, as I never have them on hand.. This time they just have the chocolate chips.. Get to baking, these are good COOKIES 🙂 🙂
