Cabbage Soup

Sometimes it is nice to have a go to soup is easy to make and doesn’t take a lot of time to cook.. It is packed with veggies and is very healthy and filling.

~Cabbage Soup~

1c cabbage, chopped pretty small
1/2c carrots, chopped
1 small yellow onion, chopped
1 handful of frozen green beans
2 cloves garlic, minced
1 can of chick peas
1 container of beef stock
1tbsp tomato paste
1/2tsp oregano
1/2tsp basil
2tbsp olive oil
s and p to taste

In a large pot  add the olive oil.. Add the carrots, garlic and onions and saute for about 5 min.. Then add the broth, green beans, cabbage, tomato paste, spices and chick peas.. Bring to a boil, then reduce your heat to a simmer for about 15 min.. Enjoy 🙂
