Tonight on the menu is Roasted Chicken.. We will have it with mashed potatoes and squash. I have a little 4lb chicken, so enough for supper tonight and to possibly make a soup tomorrow..
Here is how I am doing my Roasted Chicken:
1 4lb chicken
2 celery stalks
2 cloves of garlic
1/4c chicken broth
Salt and Pepper
I cut up the carrots and celery and roughly chopped the garlic.. Laid it on the bottom of my roaster and poured over the chicken broth.. Placed the chicken on top of the veggies and seasoned it with the thyme, rosemary, salt and pepper.. I will Bake it at 375 for about 1.5 hrs..
