Coconut Oatmeal Chocolate Chip cookies
Tonight we are having Pizza from one of our favorite Grocery stores in Michigan, Nino Salvaggios. They have a great prepared food section that includes lots of wonderful things to eat when you are not in the mood to cook.. This pizza is very good, they also serve it in their little restaurant in store.. So instead of leaving tonight’s post empty I thought that I would share with you the cookies that I made this afternoon.. After having a craving for coconut oatmeal cookies I went searching for recipes to get the jist of what would make a perfect cookie.. So after looking a a few this is what I came up with..
3/4c brown sugar
1/4c white sugar
1 tsp vanilla (I never measure, but that is a normal amount)
3/4c unsweetened coconut
11/2 c flour
1c milk chocolate chips (Toll house are my favorite)
Preheat your oven to 350degrees
Cream the margarine and sugars together, then add the egg and vanilla.. Once well incorporated add the mixture of flour and soda.. Mix that well together, then add the coconut, oatmeal and chocolate chips.. Line 2 cookie sheets with parchment paper and spoon cookies on.. Bake for 10-12 minutes.. Try not to over bake.. Cool on a cooling rack and then enjoy with some nice cold milk.
