Homemade Chicken Divan

Lately I have been having a craving for a Childhood favorite of mine.. Chicken Divan.. We usually made it with Campbell’s Cream of Chicken soup, mayo and curry.. Today I was trying to figure out how to replicate this favorite of mine replacing the main staples of the recipe with a less sodium version. This is how I made my Homemade Chicken Divan..

2 boneless chicken breast cut into chunks
1/2 head of broccoli cut into florets 
2 tbsp of margarine or you could use butter
2 tbsp flour
2 c of chicken stock
1/4 c Parmesan cheese
1/2 tsp curry
salt and pepper 
1/2 package of non salted soda crackers crushed

~ In a large skillet brown the chicken when browned (salt and pepper to taste), but not cooked through add the broccoli.. I added a splash of chicken stock to de-glaze the pan and help steam the broccoli.. When cooked place in a medium sized casserole dish. 
~Sauce: in a medium sauce pan melt the margarine.. Add the flour and cook out until you smell a nutty flavour.. Add the chicken stock, curry and salt and pepper to taste.. When it starts to thicken add the Parmesan chesse.. Pour the mixture over the chicken and broccoli.. 
~ Cover with the soda crackers and bake at 350 for 30min..
We had ours with a simple salad dressed with oil, balsamic vinegar and Dijon mustard..
