Fish chunks and Veggie Potatoes

Tonight we had fish and I am always looking to do something different.. I thought instead of cooking the whole fillet, that I would cut in chunks the bread it and bake it in the oven.. I wanted to have fried potatoes, but at the same time I wanted to have veggies.. So I thought why not cook it all together.. 

Fish Chunks:
2 white fish fillets, I used talapia cut into chunks
1 egg
1/2 c flour
1 c bread crumbs, I used Italian. You can make your own and flavour them as desired. 
Cut your fish into chinks and set up your breading station.. 3 bowls, each with flour, egg and bread crumbs.. First dunk the fish int he flour, make sure that you dust off the excess, then the egg and then the bread crumbs.. Place on a parchment lined baking sheet.. Bake for about 20 min on 375.. 

Veggie Potatoes
5 russet potatoes, cut in chunks
1/2 green pepper, chopped
1/2 red pepper, chopped
1 small yellow onion, chopped
2 cloves of garlic chopped
1 small zuchinni, sliced in quarters
1tbsp olive oil.
Salt and pepper to taste 

Parboil your potatoes, as you chop the rest of the veggies. When you can put a fork through the potatoes, drain and set aside to cool.. In a no stick frying pan add the olive oil, when hot add the veggies including the garlic.. When the garlic and onion become translucent add the potatoes. Cook until the potatoes are fork tender. Add salt ans pepper to taste..

Traditional Tarter Sauce
1/4 c of mayo
1tsp yellow mustard
1/2 tsp of sweet relish
salt and pepper to taste

Mix all together and serve along side your fish.
