Spaghetti and Meatballs

So I am cleaning out my fridge as it is the end of the week and what a way to make a pasts sauce.. This is an ideal way to use up veggies that will be replaced at next weeks grocery shopping..  And what is the best thing to have with pasta sauce but Meatballs 🙂

This is how I made my sauce:
2 tbsp olive oil
1 green pepper
1 yellow pepper
1 red pepper
2 carrots
1/4 head of cauliflower
1 medium yellow onion
4 cloves of garlic
1 lg can of tomato sauce
1 jar of you favorite flavored sauce, I used sweet basil
salt and pepper to taste

~ Roughly chop all veggies and saute in the olive oil of medium heat.. Saute until very soft (enough so you can puree the veggies) When veggies are cooked put in a blender or food processor pour in a little of the tomato sauce to help blend up the veggies.. Let it go until it is a smooth puree.. When this part is finished place in a pot and keep over low heat..

 Meatballs :
1 lb ground sirloin or extra lean beef
1/2c parmesan cheese
1/2 Italian bread crumbs
1 tbsp Worcestershire sauce
1 egg
1/4 c milk
1tbsp of Italian seasoning

~Mix all together and form into golf ball size meatballs.. Place on a parchment lined cookie sheet and bake in the oven at 350 for 20-25 min.

When the meatballs are cooked place them in the sauce.. Serve with your favorite pasta..  ENJOY 🙂
